Virtual Cooking Class: Roasted Cauliflower Curry

Green Apron Kitchen is excited to be a part of the “Just for the Health of It” cooking series with East Brunswick Public Library! These recipes are designed to be delicious, nutritious, and easy to make! Together, we will mix up meals that reflect the principles of scratch cooking and, more importantly, healthy eating. These recipes encourage us to turn to more whole foods and less processed foods, incorporate fruits and veggies in all meals, and choose whole grains and healthy unsaturated fats like avocados, nuts, fatty fish, and olive oil. We will also use herbs, spices, and low-sodium seasonings/ingredients to make food flavorful!

Ingredients:

  • 1 large head of cauliflower (or two small heads), cored, broken into larger florets, and then sliced into 1/2-inch slices
  • 1/2 onion, peeled, thickly sliced, root to tip
  • 4 cloves garlic, sliced
  • 2 tablespoons lemon juice
  • 1/3 cup (80 ml) extra virgin olive oil
  • 1 1/2 teaspoons yellow curry powder
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon gorund black pepper
